What is Extra Virgin?

The valuable oil obtained from the FIRST PRESSING of EARLY HARVESTED olives is obtained by COLD PRESSING immediately after harvest. This preserves the valuable polyphenols and other fatty acids.

Other oils labeled VIRGIN are obtained from the second pressing of the same olives and are generally obtained from more mature olives. Their polyphenol content is lower.

Other olive oils are refined, heat-treated, and often blended with other lower-quality oils. Their nutritional value is very low.

Our 500+ Polyphenol precious olive oil from our oldest trees is in very limited quantities.

Our other valuable trees also provide us with olive oils in the SUPERFOOD category, with a polyphenol value of 500+.
